Cook – Institutional (North County)

  • POSITION SUMMARY:
    The Cook staff member is required to be ServSafe Food Handler certified. Cooking staff, plans and prepares meals for Fraternity House, Inc.’s two licensed Residential Care Facilities, Fraternity House and Michaelle House, with a combined total of twenty residents. The Cook is responsible for the adherence to the organization’s State of California Community Care Licensing regulations, and carrying out the prescribed nutrition orders for each resident. NORTH COUNTY applicants ONLY.
    Fraternity House, Inc. operates two licensed residential care homes that provide 24 hour a day care to men and women living with HIV/AIDS. The organization provides a loving home environment to meet the basic needs of its residents and provide direct services including: Housing, 24-hour a day personal care, assistance adhering to complex medication regimens, nutritious home-cooked meals, access to medical care, clothing, transportation, organized activities, advocacy and emotional support.
    PRIMARY DUTIES & RESPONSIBILITIES:
    1. Under the supervision of Resident Care Manager, strive for residents’ adherence to prescribed nutrition plans set forth by a resident’s healthcare provider and/or registered dietician/nutritionist.
    2. Responsible for preparing and serving all food items per standardized recipes.
    3. Follows modified diets for special resident care.
    4. Prepare six week rotation menus that meet the unique dietary needs of the residents.
    5. Plans food production to coordinate with meal serving hours and determines amount and type of food and supplies required for daily menus. Ensures that excellence, quality, temperature and appearance of food are preserved.
    6. Guide Caregiving staff in meal preparation.
    7. Conduct weekly shopping trips, strictly adhering to budget. Ensure adequate supplies are on hand
    8. Maintain a clean and safe environment.
    9. Properly wraps, dates and stores food per State of California Community Care Licensing regulations.
    10. Responsible for keeping work area neat, clean and organized.

    JOB QUALIFICATIONS:
    1. A minimum of three years experience as a cook, or assistant cook with food planning and preparation in an institutional setting. Formally trained in the culinary arts, or have equivalent experience in the culinary arts.
    2. SafeServ Food Handler’s Certification required.
    3. Knowledge of cooking methods/procedures, volume food production, grilling techniques, sanitation serving/storage of food; ability to perform simple computations and record keeping; strong communication and customer service skills.
    4. Physical Demands: Frequent prolonged, standing/walking. Moderate to heavy physical effort (lift/carry up to 25 lbs.)
    5. Knowledge of kitchen equipment operations and maintenance.
    6. Ability to understand and follow instructions in English, and perform simple arithmetic.
    7. Show a willingness to perform routine, repetitive tasks with frequent interruptions.
    8. Must be able to work a flexible schedule, mornings and evenings.
    9. CPR/first aid certification.
    10. Completion of a physical exam, TB test, and criminal record check prior to employment.
    11. Knowledge of HIV/AIDS is a plus. Knowledge of Community Care Licensing regulations, substance abuse, and mental health issues is preferred.
    12. Sensitivity to working with culturally diverse populations.
    13. Bilingual / Spanish a plus.
    14. Must possess and maintain a valid California driver’s license and a satisfactory driving record
    15. Excellent verbal & written communication, interpersonal, and oral presentation skills
    16. Ability to communicate effectively with residents, families, staff, vendors and the general public.
    17. Computer proficiency preferred

    7. Maintain self-initiative, reliability, and resolve problems in a timely manner.
